NACE members and guests were treated to "Tasteful Topics for Your Menu," a 4-course elevated menu designed to intrigue your taste buds April 10 at historic Appleford Estate n Villanova with John Serock Catering. It was complete with wine service tableside.
There, attendees gained expert insight from our guest speakers about preparing special menus for dietary restrictions. Physician Assistant Jess DeLuise, MHS, PA-C and John Serock, owner of Serock Catering led us through the program as each course was served. An expert in nutrition, DeLuise, founded Eat Your Way to Wellness, a platform to educate and counsel clients. She earned a Masters degree in health science and practices medicine as a physician assistant.
During cocktail hour, we enjoyed networking on the tented patio and next to multiple fireplaces within the beautiful Main Line event venue. Passed Hors D’oeuvres included Falafel Lollipops with Beet Puree, “Oyster” Mushroom Rockefeller, Korean Bahn Mi Polenta Spoon, with melted leeks, mascarpone and chili oil.
The first course was a delicious Mezze Plate: Sweet Potato Hummus, Parsnip Chips, Carrot/Pistachio/Feta Salad, Spicy Olives. Next was a BLT Salad; Frisse, Cornmeal Dusted Fried Green Tomato, with a Portabella Bacon, Tomato Jam. The main entrée was a Roasted Cauliflower Steak, Chermoula. To end the evening, we were served an incredible Chana Masala Dessert Black Bean Brownie, Macerated Berries, Coconut Rice Pudding, and Gin & Tonic Macaron. We found that many of our menu items were not only nutritious but also dairy-free and gluten-free.
